Falafel di Ceci a modo mio - Crispy fried - How to Make Falafel


I Falafel è un cibo tradizionale Arabo 
Se non avete mai mangiato le polpette di ceci vi consiglio di provarle.
La ricetta tradizionale dei  Falafel  prevede come ingrediente principale le fave .
" Falafel a modo mio "  le ho fatte con i ceci e molto più verdi delle originali perché ho utilizzato tanto prezzemolo.


Queste polpettine speziate dal profumo Mediorientale sono perfette per un antipasto , per un buffet , ma anche per una festa.

Consiglio : non utilizzate ceci o altri legumi in scatola.
Dovrete usare ceci secchi tenuti in ammollo una notte.
Legumi già cotti farà in  modo che la consistenza dei Falafel sarà diversa, sarà più pastosa e si disintegrerà durante la frittura .

Ingredienti:

250 g ceci secchi da tenere in ammollo 12 ore
2 manciate abbondanti prezzemolo fresco
1 cipolla
3 spicchi d'aglio
2 cucchiaini cumino
2 cucchiaini coriandolo
4 cucchiai acqua
2 cucchiai sesamo 
sale
olio per friggere

Istruzioni: 

Tenete in ammollo i ceci per 12 ore
Trascorse le ore , sciacquate bene i ceci e metteteli nel frullatore con il prezzemolo, cipolla, aglio.
Frullate bene con l'aggiunta dei 4 cucchiai d'acqua, la consistenza deve risultare come una " pappetta "

Aggiungete al composto il cumino, coriandolo , semi di sesamo e sale.
Lasciate riposare almeno una mezz'ora in frigo.


Nel frattempo scaldate l'olio.
Inumiditevi le mani, prelevate una piccola quantità di composto di ceci e fate tante palline.

Friggete poche palline per volta in olio caldo fino a farle dorare in  modo uniforme.

Servite i Falafel con Pane Pita e Tahini

Falafel is a traditional Arabic food
If you have never eaten the chickpea balls I suggest you try them.
The traditional recipe of Falafel provides as main ingredient the beans.
"Falafel my way" I made them with chickpeas and much greener than the original because I used so much parsley.
These spicy meatballs with Middle Eastern scent are perfect for an appetizer, for a buffet, but also for a party.

Tip: do not use chickpeas or other canned vegetables.
You will have to use dry chickpeas soaking them one night.
Legumes already cooked will ensure that the consistency of Falafel will be different, more pasty and will disintegrate during frying.

Ingredients:

250 g dry chickpeas to keep for 12 hours
2 handfuls of abundant fresh parsley 
1 onion
3 cloves of garlic 
 2 cumin teaspoons
2 coriander teaspoons
4 tablespoons water
2 tablespoons sesame
salt
fry oil

Instructions:

Soak the chickpeas for 12 hours
After hours, rinse the chickpeas well and put them in the blender with parsley, onion, garlic.
Blend well with the addition of the 4 tablespoons of water, the consistency should be like a "pappetta"

Add the cumin, coriander, sesame and salt to the mixture.
Let it rest for at least half an hour in the fridge.
Meanwhile, heat the oil.
Moisten your hands, take a small amount of chickpea mixture and make a lot of balls.
Fry a few balls at a time in hot oil until they brown evenly.
Serve the Falafel with Pane Pita and Tahini.
